Corfood Bites

Discover Greece through taste

“Anyone can cook” (Ratatouille)

“Experience the authentic taste of Greece through a culinary journey you will always remember”

Our cooking class

The day will start with a chat where roles will be distributed according to your cooking skills. Then, we will pick some vegetables from our garden (if ripe) and begin to cook.

Every Greek feast includes four courses: starters, salad, main course and dessert.

All participants will be involved in preparing the dishes of the day with Christos on hand to guide and supervise.

When we have finished cooking, it is time to sit at the table and enjoy the fruits of our labour over a gargantuan feast.

Delicious Greek food, friendly company, good mood and excellent wine are all the necessary elements for an unforgettable experience, which will last from 4.5 to 6 hours, depending on the complexity of the menu and the number of participants.

The classes are in English and/or French.

About the menu

STARTERS

Starters or Mezedes: Mezedes are essential in every Greek feast, and they are usually accompanied by ouzo or tsipouro, a strong distilled spirit, which acts as an ice-breaker among people sitting at the same dining table and lifts the mood.

We have separated our starters into 4 different groups:

Cheese

 – Feta filo: feta cheese wrapped in filo pastry and topped with honey and black sesame

 – Bouyourdi: feta cheese and kasseri cheese with tomatoes and hot peppers baked in the oven (spicy)

 – Saganaki: fried kefalotyri cheese

Patties

 – Kolokithokeftedes: zucchini patties

 – Marathokefedes: fennel patties

 – Ntomatokeftedes: tomato patties

 –Taramokeftedes: fish egg patties

Please note that spring onions and herbs are included in all patties

Dips

 – Tzatziki: the famous Greek dip made with yoghurt, cucumber and garlic

 – Melitzanosalata: eggplant dip

 – Taramosalata: fish egg dip

 – Tirokafteri: cheese dip with feta cheese and hot chilli (spicy)

Saucy starters

 – Bourdetto: a famous Corfiot dish with fish cooked in hot chilli powder sauce

 – Spetsofai: Greek sausages (loukaniko) with peppers and onion, cooked in a red sauce with wine

 – Soutzoukakia: meatballs cooked in red tomato sauce with the dominant taste of cumin

 – Imam: Baked eggplants stuffed with caramelised onions, garlic and crushed tomatoes

Please note that each cooking class includes four starters, one of each category.

SALAD

Although many salads exist throughout Greece, none can beat a traditional Greek salad. Therefore, we will prepare this colourful and nutritious dish, unlike anything you have tried until now, with all the ingredients freshly picked from our garden. A generous portion is guaranteed.

MAIN COURSE

Greece has so many dishes to offer that it would be impossible to include all of them in a single menu. So, we have selected half a dozen, such as:

– Mousaka: the most famous Greek dish made with eggplants, minced meat and béchamel cream that needs no introduction

 – Gemista: peppers and tomatoes stuffed with rice and baked in the oven

 – Sofrito: a Corfiot plate of beef meat slices cooked in garlic and vinegar white sauce

 – Pastitsio: pasta with beef minced meat and topped with béchamel cream, baked in the oven

 – Kokkinisto: beef meat cooked in red sauce and served with pasta

 – Pitta (pie): pitta is probably one of the most elaborate and challenging Greek dishes to prepare, but it is worth the effort to learn how to make a delicious Greek pie. The pastry beautifully brings up the flavours of the filling. Whether it is with cheese, spinach or minced meat, it will definitely satisfy your culinary requirements.

Please note that the main course will be accompanied by top-quality Corfiot wine.

Each class includes one main course of the courses mentioned above.

DESSERT

There is no Greek feast without a traditional sweet, so indulge yourselves with one of the most famous Greek desserts. Whether it is baklava or halva, galaktoboureko or orange pie, it will end your day at Corfood Bites in the sweetest way.

The Greek feast at Corfood Bites includes

  1. Four appetisers
  2. Greek salad
  3. One main course
  4. One dessert
  5. Tsipouro (homemade distilled spirit)
  6. Local white wine
  7. Copy of the recipes (printed or digital)

A few words about your host

I was born and raised in Naoussa, a town in Northwest mainland Greece with a long culinary tradition.

As it is located at the crossroad of different civilisations, our kitchen is a fusion of Greek, Turkish, Slavic and Western influences. Not surprisingly, Northwest Greece’s cuisine is considered one of the richest and most unique.

I grew up in a family where everyone cooked, and the kitchen was the beating heart of the household.

After moving to Corfu in 1991, I began to incorporate the delicious dishes the island has to offer into my own cooking, as the cuisine in Corfu has been strongly influenced by the Venetians, who occupied the island for several centuries.

In 2012, I moved to faraway Australia, where I spent many years as a pastry chef.

After this long and fascinating sojourn in Australia, I have returned to Corfu and am ready to transfer my cooking expertise to those willing to be initiated into the secrets of the renowned Greek cuisine.

So, Foodies, if you love Greek food and are looking for a unique Greek culinary experience, join me in a hands-on cooking class where I will share my knowledge and love for cooking.

It’s an experience you will never forget.
